Healthy Smoked Meatloaf
So versitile and delicous that you won't know you're eating healthy. We use this meal prep entrée for lunch as sandwiches on sourdough bread or dinner with potatoes and veggies.
This recipe for Healthy Smoked Meatloaf is roughly 8-12 servings (to us that means about 6 days of a meal each day prepared in advance) or freeze loaves for later.
Mix together:
3 lb Ground Turkey (93/7)
1 lb Ground Beef (93/7)
1 Tbs Seasoning (I like Kinder's The Blend or Santa Maria)
1 Cup finely chopped onion
2 Eggs
1 Can Tomato Sauce
1 Cup Oatmeal, uncooked
Chopped bell pepper or jalapeno (optional)
Divide the meat mixture into baking 2-3 smallish-medium pan(s).
Smoke in Traeger ( we use the Ranger) at 250° until done ~ 120 min or smoke until meat internal temp is 165° . Or you can bake sans the smoke at 350° in oven until done ~ +/- an hour until 165°.
