RV Easy Enchiladas Verde - Rolling Stop
RV Enchilada Lasagna
Yup, I cheat when I make my enchiladas. (It’s my RV hack for easy meal prep)

2 lb shredded (10-12 min instapot chicken breast shredded)
1.5 cups 2% low-fat cheese cheese
1 can green enchilada sauce
6 tortilla ( cut for a game of Tetris)
Layered like lasagna and baked 30 minutes @ 375°F. I baked in my Ninja airfryer toaster oven.
6 servings - 14 g Fat , 18 g Carb , 38 G protein
I love chips so I cut, spritz lightly with avocado oil, salt and toast up a few tortillas the air fryer for some crunch. 400°F 6 min
